Joe and Wendy Knapek
The Knapek family farm in Foley, MN was established in 1890. Joe began farming with his dad Francis on the family farm, but then later bought the adjacent farm and land when he and Wendy were married. Joe and his dad combined the farms and are still farming together. Together they run 420 acres. The family farm was a dairy for 110 years. In 2000, both farms were converted to steers and beef cattle. At this time, Country Meats, a meat processing plant was opened by Joe and Wendy. Today, the day to day operations of the “Country Meats” business are combined with the farm operations of growing corn, soybeans, oats, and hay, along with tending to the cows and calves. The farm is operated by Joe and Wendy and their four daughters, along with Joe’s parents Francis and Donna Mae Knapek, and Joe’s brother Tim and his family.
In the community, the Knapek family is active in the 79’ers 4-H Club. Joe and Wendy are also members of Gilman Park and Recreation where Joe coaches youth league softball. Joe is also a member of the Parish Council at Saints Peter and Paul Church in Gilman. Wendy teaches religion classes. The family also spends a lot of their time at Foley Public School activities.
